Carbon dioxide is the standard gas for most draft beer systems. It carbonates the beverage and pushes it from the keg to the faucet. CO2 works well for most ales, lagers, ciders, and sparkling wines. It is also used for carbonated water and soda systems.
Nitrogen is used for beverages that require a creamy, smooth pour with low carbonation. It is the gas of choice for stouts, porters, and nitro cold brew coffee. Because nitrogen does not dissolve into liquid easily, it pushes without over-carbonating, giving drinks their characteristic tight, cascading head.
A blend of 60% CO2 and 40% nitrogen, mixed gas is used for long draw systems where beer must travel significant distances from the cooler to the tap. The nitrogen provides the push while the CO2 maintains carbonation levels over the extended line length. Common in bars and venues with remote cooler setups.
A higher nitrogen blend used specifically for nitrogenated beers like Guinness and other stouts. The increased nitrogen content produces the soft, velvety texture and dense head these styles are known for. Using standard CO2 on a nitro beer will over-carbonate it and ruin the pour.
Argon is an inert gas used primarily for wine and cocktail dispensing systems. Because it does not react with the beverage, it preserves flavor and prevents oxidation without altering carbonation. It is the preferred gas for open bottles of wine on tap and for spirits or pre-batched cocktail systems where product quality must be maintained over time.
